| Cabbage Noodles | ||
| This is a dish in which cabbage is also used, but in a sweet variation.

| Shred the cabbage into a large bowl and sprinkle with 2 tsp. salt.  Mix and let stand 15 minutes.  Take the cabbage out of the bowl and squeeze well to remove as much juice as possible.  Heat a little oil in a pan and sauté the cabbage, stirring constantly to prevent burning.  When almost finished, add 1 tsp. sugar and allow to caramelize lightly.  When the cabbage turns a golden brown colour, it is ready.  Boil the noodles in salted water, then drain and toss with 50 g butter.  To serve, mix the cabbage with the noodles and sprinkle with sugar.
