Salat de Boeuf (Beef Salad)
 
     


Salat de boeuf is a meat salad.  The ingredients are the same as for beef soup.
  If there are sufficient leftovers from a beef soup, a salat de boeuf can be prepared quickly. 
This salad may also be served with a fondue.

2 kg
 
beef soup meat

Prepare the soup with the soup ingredients
(see recipe for Beef Soup).  Let cool. 

Cook peas in water for a few minutes and let cool.  Cut meat, parsley root, celeriac and gherkins into small cubes.  Mix carefully with peas (fresh cooked or canned) and mayonnaise.  Season with lemon juice, sugar, salt and pepper.  Garnish with chives, parsley or pickles.  Serve chilled with fresh white bread.
